Souvlaki Marinade

Ingredients:

Equipment: Juicer, Microplane, Cutting Board, Chefs Knife, Mixing Bowl, Tongs

  • 5 Garlic Cloves 
  • 1tbsp Dried Oregano 
  • 1 Sprig Fresh Rosemary 
  • 1/2tsp Paprika 
  • 1tsp Sea Salt 
  • 3tbsp Olive Oil 
  • 1tbsp Grapeseed Oil 
  • 2tbsp White Wine 
  • 1 Lemon, juiced and zested 
  • 1lb Boneless Chicken Thighs, cut into 1 inch pieces 

Method:

  1. Place all ingredients into a food process and pulse until a paste is formed.
  2. In a large bowl, add chicken and marinade and mix until all pieces are coated.
  3. Let marinate for at least 2 hours covered, overnight is best.
  4. Meanwhile, soak bamboo/wooden skewers.
  5. Thread 2-3 pieces of chicken on each skewer. 
  6. Grill on a hot grill pan or BBQ and cook until the internal temperature reaches 165F. Flipping halfway in between.
