Souvlaki Marinade

Ingredients:
Equipment: Juicer, Microplane, Cutting Board, Chefs Knife, Mixing Bowl, Tongs
- 5 Garlic Cloves
- 1tbsp Dried Oregano
- 1 Sprig Fresh Rosemary
- 1/2tsp Paprika
- 1tsp Sea Salt
- 3tbsp Olive Oil
- 1tbsp Grapeseed Oil
- 2tbsp White Wine
- 1 Lemon, juiced and zested
- 1lb Boneless Chicken Thighs, cut into 1 inch pieces
Method:
- Place all ingredients into a food process and pulse until a paste is formed.
- In a large bowl, add chicken and marinade and mix until all pieces are coated.
- Let marinate for at least 2 hours covered, overnight is best.
- Meanwhile, soak bamboo/wooden skewers.
- Thread 2-3 pieces of chicken on each skewer.
- Grill on a hot grill pan or BBQ and cook until the internal temperature reaches 165F. Flipping halfway in between.
- Serves 4
