HOLIDAY BRUSSELS SPROUTS

Compliment your Thanksgiving and Christmas dinner with this delicious side dish.

Serves 4

Ingredients:

  • 1.5lb x Brussels Sprouts, cleaned, trimmed and cut in half
  • 4 x Slices of bacon or pancetta, diced into 1/4" pieces 
  • 1 Tbsp x Extra Virgin Olive Oil
  • 2 x Cloves of garlic OR Zoë Garlic-Infused Oil
  • 1 x Shallot, minced
  • 1 x Leek, thinly sliced, white parts only
  • 1 Tbsp x Unsalted butter
  • 1 Tsp x Lemon juice
  • 2 Tbsp x Parmesan, grated

Instructions:

  1. Bring a pot of salted water to a boil and blanch Brussels sprouts for 1 min. Remove and drain.
  2. Heat a large pan over medium-high heat, add olive oil or Garlic-infused Olive Oil.
  3. Add bacon to the pan and sauté for 5 mins or until crispy.
  4. Add garlic, shallots, and leeks and sauté for another 3 mins or until translucent.
  5. Add in blanched Brussels sprouts, season with salt and pepper, toss until all incorporated.
  6. Add butter and let brussel sprouts crisp up in the pan.
  7. Finish with a squeeze of lemon and grate parmesan on top. Enjoy!
