Honey Roasted Carrots

Ingredients

  • 1 kg. baby carrots, peeled
  • 500 g. baby golden beets, peeled, halved
  • 2 tsp. thyme
  • salt
  • pepper
  • 2 tbsp honey
  • 2 tbsp white wine

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Toss the carrots and beets with olive oil, thyme and salt and pepper. Roast for 20 minutes.

  3. Stir carrots and beets, drizzle with honey and white wine. Roast for an additional 20 minutes.
